Spring Pea & Pancetta Pasta, Black Bean Quinoa Burgers, Lentil Soup, and more!

Whenever I come back from a trip, I am I’m the mood to cook simple, healthy, seasonal food. It’s a weird mix of really cold and warm weather here, so I’m still making soups, but also craving roasted salmon and lighter salads for other meals. This week, I’m making one of my favorite spring pastas with Pea & Pancetta (pictured with penne, but you can use any shape pasta you like). It’s a riff on carbonara, meaning you mix and egg and Parmesan together and toss it with the hot pasta and some cooking liquid to create a silky sauce. It’s so simple, yet satisfying.
