I hope everyone is having a good week! We are currently on spring break with the kids, and I can’t wait to tell you where I’ve been exploring :) I’ll leave you in suspense another week, but I’ll share some photos and stories in next week’s newsletter!
In the meantime, here are some simple and delicious recipes that I’ll be making as soon as I’m home. I love traveling, but also craving some veggies and bright spring flavors. Also, I love a good stir-fry when I want to eat veggies and also wake up my taste buds a bit. Feel free to add in some rotisserie chicken to the stir-fry rice, or a scrambled egg for some extra protein.
