Easy Seafood Stew, Farro Salad with Snap Peas, Mint, and Radishes, and More!

It’s my birthday in a few days, so I am sharing a few of my favorite Easy Weeknight Meals. (I’m also making this newsletter free for everyone this week!)
I love this Easy Seafood Stew. I love the variety of seafood - mussels, shrimp, and any sort of flaky white fish - and the citrus kick from the orange zest. I add red pepper flakes to make it a bit spicy. I’m also including an easy Sheet Pan Roasted Chicken & Vegetables - everything cooks on one pan so dinner is ready at the same time, and clean up is a breeze.




This Farro Salad with Arugula, Snap Peas, Radish, and Feta is one of my favorite spring salads. (And for those of you who are gluten-free, try making it with quinoa or buckwheat groats.) I love making it for dinner, and then enjoying the leftovers for lunch. Serve with leftover roast chicken or roasted salmon.
Another quick go-to in the spring and summer months: Spaghetti with Lemon, Arugula, and Prosciutto (if your kids don’t like all the ingredients, just add butter and Parm to theirs). And finally, I love these Quesadillas with White Beans, Leeks, and Goat Cheese - a nice step up from your run of the mill cheese quesadilla. Enjoy!

Sunday: Easy Seafood Stew + Crusty Baguette
Monday: Sheet-Tray Herb-Roasted Chicken with Root Vegetables
Tuesday: Farro Salad with Arugula, Snap Peas, Mint, Radishes + Leftover Roast Chicken
Wednesday: Lemony Spaghetti with Prosciutto, Arugula & Lemon
Thursday: Quesadillas with White Beans, Leeks, and Goat Cheese
Friday: TAKEOUT/DELIVERY
Prep Plan
Sunday: Make the seafood stew for dinner
Prep ahead: Chop veggies for Monday’s night’s dinner
Monday: Roast chicken and veggies
Tuesday: Cook farro; drain and cool. Meanwhile slice veggies and prep salad. Serve with leftover roast chicken if there is any. Otherwise, this would be delicious with roasted salmon or any other type of fish or protein.
Wednesday: 20 Minute Meal: Cook pasta; toss with prosciutto, lemon, Parmesan, and arugula.
Thursday: Sauté leeks. Make quesadillas.
Friday: NIGHT OFF!
