Your Weekly Meal Plan: April 21-26
Cauliflower-Feta Fritters, Quiche Lorraine, and a Home Renovation Project! Oh my.
Hi friends!
Things are a bit nutty right now - we are about to begin a big home renovation project on Monday that requires moving half of our house into a storage unit. We have been planning this for nearly a year, but it’s still hard to believe that it’s actually happening! We have to clear out our entire upstairs (bedrooms, bathroom, attic) and sunroom, and we are living downstairs for the next 5 months: the kids will camp out in the family room and Brandon and I will sleep in the office/guest room.
I’m sorting everything into piles: stuff to go downstairs, stuff to pack into the storage unit, stuff to give away, stuff to sell at a garage sale, and then throwing away the rest. (Note to self: WHY DO WE HAVE SO MUCH STUFF?!!?!) I’ve had the help of some amazing organizers from Suddenly Simple Organizing to tackle this overwhelming task, and I am insanely grateful for them. (I 10/10 recommend them, if you’re in the Nashville area!) Our garage sale is tomorrow, which happens to fall on the same day I’m catering a friend’s small wedding, and then movers come on Sunday. Phew!
In the midst of all of that, I have not been cooking as much as usual, but if I were - these are a few of the things I’d make! Ha. My kids have been asking for this Spring Split Pea Soup so I will try and make it once we get the renovation underway. I also love this easy Prosciutto-Wrapped Pork Tenderloin with Roasted Asparagus - everything roasts together in the oven and it feels elegant, yet simple enough for a weeknight. And I’ve been craving these Cauliflower-Feta Fritters…they are absolutely delicious with a dollop of yogurt dip and a Greek salad on the side. YUM.
