Your Weekly Meal Plan: April 13-20
Grilled Skirt Steak Tacos, Lemony Spaghetti with Arugula, Cobb Salad, & more!

Last week, instead of our regular “Weekly Meal Plan,” I shared with you all a menu and recipes for a fantastic spring dinner party that I hope you’ll make sometime soon. It is so good, with such bright, spring-y flavors that I just want it eat it all over again. Please let me know if any of you recreate the menu! I’d love to hear about it :)
For this week’s menu, I have a few of my favorites: Garlicky Shrimp with Tomatoes and White Wine, which is so easy and I love serving it with couscous and some roasted (or steamed) haricots verts. I always prefer fresh shrimp if I can find them, but in a pinch, I’ll keep a bag of Trader Joe’s frozen shrimp in my freezer and thaw them under cold running water.
I love a meal that can be enjoyed for 2 nights, so I included Grilled Skirt Steak with Chimichurri, whose leftovers can be repurposed as tacos! Make the steak on a Sunday (now that it’s grilling weather!) and enjoy with roasted sweet potatoes and a salad. A few days later, slice any leftover meat thinly (or, if you don’t have any leftover steak, use rotisserie chicken) and serve on warm tortillas with sliced avocado and chimichurri. And if you have extra sweet potatoes from Sunday, use those too!
